炒滑蛋點解要加奶?



大家都知想炒個靚滑蛋,會加少少奶,但你又知唔知點解呢?我就聽過幾個說法,其中一個係指牛奶含有酪蛋白,等雞蛋可以喺低溫下逐漸凝固,唔會一下子變老,所以會滑啲;不過亦有人認為加咗奶會令蛋味變淡,唔應該喺炒蛋時加任何水或奶。唔知大家又鍾意食邊款蛋呢?
